Butter Tarts I Like

A yummy alternative to mince pies – serve year round!


Ingredients:

  • 1 cup raisins

  • 1 cup brown sugar

  • 2 tablespoons butter

  • 1 egg

  • ½ tsp. vanilla

  • I add nutmeats

Method:

  1. In a mixing bowl put raisins, scald with boiling water, drain and while raisins are still warm, add brown sugar, butter and beaten egg. Stir well together for a few minutes. Add vanilla. If the ingredients are mixed together while currants or raisins are still warm there will be a nice butterscotch-like syrup.

  2. Line deep patty pan with a short or flaky pastry and put in a spoonful of the filling. Bake in 400 degree oven for 10-15 minutes.
