Blue Peter Tea Bread by Nigel

This is a recipe I got off Blue Peter in the mid 1980's and first made with my grandmother.  It is a fat free firm tea bread, and very simple to make.  The cup used is not a typical kitchen measuring cup, but a teacup (rather than a mug).  Lovely sliced with a bit of butter on it.  You can add spices or use earl grey tea for an alternative.


Ingredients:

  • 2 cups raisins

  • 1 cup sugar (soft brown is best, but you can use any)

  • 1 cup hot strong black tea

  • 2 cups self-raising flour

  • 1 egg

Method:

  1. Put sugar and raisins in bowl. Pour over the hot tea, and leave to soak for 15 minutes.

  2. Stir in the flour.  Beat in the egg.

  3. Put in a two pound loaf tin, and bake in a preheated oven at 190C until a skewer comes out clean (about 45-50 minutes).
