Birthday Fruit Cake by Lynda

Ingredients:

  • 6oz/170g Butter or margarine

  • 5oz/140g Castor Sugar

  • 1oz/30g Brown Sugar

  • 3 Large Eggs

  • 4oz/115g Plain Flour

  • 4oz/115g Self Raising Flour

  • ½ tsp. Mixed Spice

  • 4oz/115g Sultanas

  • 4oz/115g Raisins

  • 1oz/30g Plain Chocolate drops


Method:

  1. Cream Butter & Sugar together until light and fluffy. Beat in the eggs one at a time.

  2. Sieve together the flours and spices and fold into the butter mixture. Stir in fruit and chocolate drops.

  3. Spoon into a greased and lined 7 inch deep cake tin. Bake in a preheated oven at 130C Fan for 1.1/2 – 1.3/4 hours. Remove from oven and leave in the tin for 5 mins.

  4. Or till cool.

  5. Turn onto a wire cooling tray. Remove greaseproof paper and leave to stand until cold.

  6. Can be decorated with Royal Icing.
